can make same with paneer as well]
for 6 medium potatoes
cut into small pieces and then put in this masala [for 2-4 hrs]
Ginger-Garlic Paste - 2 spoons
Jeera Powder - 1 tbsp
Chat masala - 2 tbsp
salt to taste
pinch of black pepper
Pinch of Red chilly
Parampara masala [any if u have] - 1tbsp
Yogurt - small 1/2 cup
Lime juice - little
Aijwan - 1/2 tsp [if not also its ok]
Oil - little
In Oil put Green chillies [how much mirchi u need] and then cook the alu mix in it
seperately or after alu is 3/4th cooked
cut capsicum and onions - big square pieces and also add very little masala [upar wala] into it and can keep aside for 2 hrs as well.
this masala u can cook seperately and add to alu mix or u can add it when alu is 3/4th done.
also if everyone does not like capscium .. u can keep it seperately and add it later also
u need to make atta - with salt in it .... u take a big ball [maybe size of 3 rotis] and then make a BIG paratha sie of pan .. and u can first put on it green chutni [mint or kotimmer] and add alu and capsicum and onion mix and then roll it and u can serve it then

Quesadilla Recipe
Ingredient
Onion, Green and red pepper, green and yellow squash (if u like), black beans, corn and jalapeño, some time I add asparagus (depends upon u)
Method
Cut Onion (length wise) peppers and squash (small piece).
Add jalapeño in oil and then onion sauté it so that they are dark brown, add peppers and cook them until crispy soft (not too soft), add squash black bean and corn. Add salt and if want u can add red chili paste, or red jalapeno paste (readymade from shop rite) for more spice.
I usually use flavored tortilla (jalapeno herb or tomato basil or garlic pesto) (available in shop rite)
Spray them with oil both side and spread the vegetables on the one half of the tortilla spread cheese on the vegetables and cover with other half.
Put it in oven at 375 C for may be 20 min until cheese is melted and tortilla is little brown (not too much other wise it will be brittle)
Ready to eat with salsa
